Lemon drizzle and berry cake

I have never made a lemon drizzle cake before so this was a leap into the grey. I think it turned out okay :S


INGREDIENTS
3 eggs
175g self raising flour
175g softened butter
175g caster sugar
1 1/2 tsp baking powder
Dash of lemon juice
Fresh berries
Greased loaf tin

100g caster sugar
Lemon juice



DIRECTIONS
Pre heat oven to gas mark 4

Combine eggs, butter, sugar, flour, baking powder and a dash of lemon juice in a bowl until creamy mixed and fluffy.

Pour into half the mixture into the loaf and layer the berries before adding the rest of the mixture

Bake in the oven for 35 minutes or springy to the touch and golden brown

Remove from the oven and immediately combine the 2nd caster sugar amount and rest of the lemon juice to make a syrup

Turn out the cake and drizzle over the syrup whilst still warm, this allows the infamous crust to form.

Decorate if desired and enjoy :)

CHRISTMAS CAKE

So this year I made our christmas cake! Oh and did i mention it included a gingerbread house?



Sorry for not having kept up to date with my blogging. I'm terrible at being consistent with things, i tend to get really enthusiastic, then lazy, then distracted and then feel really bad about it. So sorry!!!!


BuT!!!! I have been doing some baking, which has done two things. 1. convinced me that i really do think i would like to become a Pâtissière  2. i am absolutely fed up of being controlled by food.

My 18th birthday bonfire cake!

It was pretty special so I spent forever on it. I started with a three tiered gingerbread cake sandwiched with ginger and treacle syrup. Which was then covered with 3 layers of ginger buttercream, in the colours of fire. The board was then covered with black treacle and orange icing and covered in black and orange sprinkles. The cake was then surrounded by orange chocolate logs and the marzipan guy Fawkes was coloured and placed proudly on top. Time consuming!!!!
